If you want the Home speaker in your office to sync playback to the Sonos speaker in your office, you can set up that up in the Google Home app. So it looks like the Sonos integration with Google assistant is worse that I originally thought. Not only Sonos speakers cannot be set as a default target, then don't seem to use the same backend search then Google assistant. When I request something to be played on the Sonos system by Google home, the answer I get it not the same voice and the search result for songs are not the same.
Now, when you ask the Assistant on that particular GoogleNest device to play music, it will come from the Sonos speaker you selected. The only way around the issue is to tell the Google Assistant which device you want to change the volume on. Just make sure that you have unique names for your devices. For example, in my home I can say, “OK Google, set Dave Office Display volume to 6”. This option lets you select which Sonos speaker a Google Home device should play music to by default. To make this setting work optimally, you should set a Google Home speaker to use a Sonos speaker that’s in the same room as it.

Using google home to edit the google device settings i can set default speaker to a sonos target. It was a bit glitchy, i had to attempt about 5 times, but eventually the change stuck and worked. In the Google home app I have no option to set any Sonos as default speaker for my Google Home devices.. After you have set your Sonos speaker as default, you will still be able to issue commands to your Assistant device. However, to ensure the Assistant doesn't respond to you on both devices, it is a good idea to turn off the microphone on your Sonos device.

I literally wasted 2hrs linking Play 5 stereo pair to Google assistant - it took endless renamings, unlinkings, etc. Sonos play 5/ Google Assistant integration is basically rubbish, an alpha product mvp. All it can do is to play something on the Sonos, after adding a long, convoluted “play xx on Family Room”. So I thought okay I can move a Sonos One from another room to the living room to act as GA hub there - no sir, it is a full 5.1 setup so it is not allowed. That's a highly desired feature that has not been implemented yet.
Today, we have millions of users a month from around the world, and assess more than 1,000 products a year. I ended up having to get to my phone to control the sound system defeating the whole purpose of Sonos integration. I'm thinking that might only work with Sonos ONE or BEAM... I've added my Sonos to Assistant and I don't see my devices at all.
